This coffee is produced in the Microcentral of the La Sierra neighborhood in the city of Medellin.
Using the same practises for harvesting, the coffee from the farms of Don Gabriel, Yesid, Pedro and Cheo are mixed from their plantations that are still preserved in the city of Medellin in what in the past, was one of the most violent areas of the city.
The process begins by taking the cherry to the microcentral that is administered by Don Yesid. Here, a pre cherry fermentation process takes place.
After the pulp is removed, a new fermentation is done in the mucilage, where lactic fermentations start to improve the body and aftertaste. Finally, after washing, they are left to dry on African beds for 8 to 10 days, allowing the complexity of the notes to mature.
