    Our connection to Peruvian coffees runs deeper every year – we find that Peru offers some of the most dramatic landscapes and coffee growing micro-climates that the possibilities are endless. Just by jumping from one mountain to the next, we find the cup profiles changing from sweet and chocolatey to lingering grapefruit and raspberry-tart.

    Having had the chance to travel to Peru this past summer, we arranged to meet Ms. Vásquez on one of our farm visits. Driving into the mountains about two hours from the nearest city of Jaén, we then started the ascent by foot to Esmérita’s plot that she calls La Esperanza (Hope). She met us there with a huge smile and a lot of presence, machete swinging from her belt by her side.
    She walked us through La Esperanza, a beautifully green piece of land at the top of the mountain, with a 360º view of the surrounding area. Her farming style is quite rustic, but the varietal selection speaks for itself. Esmérita and her husband do all the work on the harvest, so days get long and mobility is difficult. But therein lies some of the magic to this cup — because it’s just the two of them, they physically can’t harvest and then rush to pulp the coffees in the same day, as is common in many parts of the world. Instead, they leave the day’s harvest tied up in grain-to bags right there on the farm to collect a few days later, which incidentally begins a slightly intense fermentation stage, somewhat mimicking the now-popular “anaerobic” style.

    The cup is strong yet nuanced, a perfect combination of excellent climate conditions and land management.

    Esmerita’s Recipe
    She ferments her coffee for a total of 48 hours in grain pro bags.
    First, she ferments it in cherry for 12 hours. Then, she de-pulps it and ferments it again in bags for 36 more hours. After washing the depulped coffee, she moves it in bags to her house in La Coipa to dry on raised beds for 20-25 days, depending on the climate of the area.

    We’ve had the pleasure of visiting El Bebedero three times now, with Germán and his beautiful family as our hosts. We’ve walked among his healthy trees across the different plots in the farm, his new processing infrastructure and chatted plenty about his plans for future experimental fermentation and expansion. Having purchased as much as we could since 2019, we’ve seen growth not only in the cup scores and quality year after year, but also as a visionary leader among his family and community.

    Peru is a coffee power house and we believe it does not yet get the recognition it totally deserves! It is often an origin associated with lower quality Fair Trade, or washed “blender” coffees. But Peru is an incredibly diverse landscape with micro climates all throughout where producers are doing amazing things and working to show that they have so much more to offer. Germán Carranza and his family are some of those producers who are pushing the boundaries and we are really excited to see what they will offer in the harvests to come.

    This coffee was grown by Germán and Keyla and has 300 hours of anaerobic fermentation in cherry, dried for 28 days under shade in their new drying facility in the village of Puerto Malleta on the shores of the Marañón River.

    José Giraldo is a third generation coffee producer. He is a talented young guy who discovered alongside his dad that good coffee, needs good soil. This is how in just 4 years they turned their farm from commercial to specialty with truly remarkable results.

    Finca El Diamante is the home where Panela Sticky is grown. Located in the south of Huila, this Pink Bourbon grows at 1750 masl. and forms part of a Café 1959 program to process cherries from different farms. For this coffee they partnered with El Diamante to collaborate and co-create a sweet, clean, bright, and easy to drink coffee.

    Coffee cherries are collected in the ripest stage when there is a ripe pink color (22 Brix degrees), the same reason the variety is called Pink Bourbon. It is theorized that it is actually a cross mutation between native Ethiopian accension and bourbon plants. Some characteristics of Pink Bourbon are good production, beautiful pink ripening and the sweetest mucilage you can imagine. Pink bourbon has the perfect level of sweetness for pursuing the creation of Panela Sticky.

    Cherries were collected and put into GrainPro Bags to start the 13 hour night time trip from Huila to Quindio, where the 1959 fermentation and drying facility is located. Traveling during the night helps to control the temperature in the first stage of the fermentation that takes place in the truck.

    Once arrived in Quindio and after a full 24 hr. fermentation, they pulp the coffee before putting it into closed tanks for another 24hr anaerobic fermentation, after which they open the tank, wash the coffee, rinse it, and return it once more into a dry, closed tank for the third and final 24 hr. Fermentation. Then the coffee is washed and rinsed a second time before laying it onto raised drying beds.

    The end step of this process is resting the coffee, in a long, slow, shade-drying process that takes on average 40 days. All this results in the stunning coffee Cafe 1959 calls, Panela Sticky.

    Since our first import of Edwin’s coffees in January 2021, we’ve had the pleasure of representing his expertise to roasters across the USA and New Zealand, and are grateful he entrusted us with his life’s pursuit. If this is the first time you are trying an experimental process, we recommend you take a minute and forget what you think coffee “should” taste like. It is an experience all of its own.

    Purple Honey Recipe
    This Purple Honey coffee was grown in Acevedo, Huila and processed in the facilities of Finca Campo Hermoso. Cherries are harvested above 20ô brix’s. Cherries are soaked in water for 5 hours. Initial cherry carbonic maceration for 96 hours. Coffee is depulped leaving 45% of mucilage for the second cherry anaerobic fermentation of 48 hours, with recirculation of the Mossto every 24 hours . Coffee is sun dried on African beds for 24 days until humidity is 10.5%.

    Final humidity stabilization for 8 days inside a warehouse, then coffee is finally stored on grain pro bags. After the final stabilization of 8-10 days, coffees are cupped and the lots organized.

    La Coipa Community lot owes its name to the region where it grows. This blend is made up of three producers whom we had the pleasure of meeting personally. They manage small family farms ranging in size from 3 to 5 hectares.

    About this blend

    After the harvest, the producer delivers their coffee in parchment to our friend Eric from Alpes Andinos, a growers’ association headquartered in Jaén, Cajamarca, about 90 minutes down the mountain from La Coipa. Alpes Andinos is in charge of classifying the coffees and pointing them in the appropriate destination.

    The coffees that make up this blend were collected and selected for their consistency and size. In this instance, the profile is very relevant since they must be very similar in order to be compatible for blending.

    The blend itself is the product of art, in that the blending of coffees includes multiple variables to manage. It’s the result of cupping of a lot of coffees delivered by the producers of the same region. This is complemented with the deep understanding Eric has of the profiles of each producer and their origin; their farms and realities. The goal is to have a consistent product with the end consumer in mind. It is in this last part where the articulation with Yellow Rooster is key to find what the roasting community expects in a blend.

    In this community lot from La Coipa the varieties Caturra, Bourbon, Typica, and Pache all together give us as a result a unique and representative profile of La Coipa where notes of Chocolate, Caramel and Starfuit stand out.

    Our relationship with German and his family started in 2019, which has allowed our business trips to origin to turn into visits with friends.
    We’ve had the pleasure of visiting El Bebedero three times now, with Germán and his beautiful family as our hosts. We’ve walked among his healthy trees across the different plots in the farm, his new processing infrastructure and chatted plenty about his plans for future experimental fermentation and expansion. Having purchased as much as we could since 2019, we’ve seen growth not only in the cup scores and quality year after year, but also as a visionary leader among his family and community.

    Peru is a coffee power house and we believe it does not yet get the recognition it totally deserves! It is often an origin associated with lower quality Fair Trade, or washed “blender” coffees. But Peru is an incredibly diverse landscape with micro climates all throughout where producers are doing amazing things and working to show that they have so much more to offer. Germán Carranza and his family are some of those producers who are pushing the boundaries and we are really excited to see what they will offer in the harvests to come.

    Edwin @alquimistaspecialtycoffee is a life-long coffee grower, a trained agronomist, instructor, consultant, Q-Grader and Cup of Excellence judge. His coffees represent an intense pursuit of flavor based upon knowledge, experience and years of trial and error.

    Since our first import of Edwin’s coffees in January 2021, we’ve had the pleasure of representing his expertise to roasters across the USA and New Zealand, and are grateful he entrusted us with his life’s pursuit.

    If this is the first time you are trying an experimental process, we recommend you take a minute and forget what you think coffee “should” taste like. It is an experience all of its own.

    Red Fruit Recipe This Red Fruit coffee was grown and processed in the facilities of Finca Campo Hermoso. Cherries are harvested above 23ô brix’s, then are soaked in water for 4 hours. Initial cherry Carbonic Maceration fermentation for 72 hours with Mossto.

    After that there is a second parchment Carbonic Maceration fermentation for 72 hours with Mossto + RED Fruits + Wine Yeast. Coffee is sun dried on African beds for 25 days until humidity is 10.5%. Final humidity stabilization for 8 days inside a warehouse, then coffee is finally stored on grain pro bags. After the final stabilization of 8-10 days, coffees are cupped and lots organized.

    The cooperative provides various services to its associated producers, including credit facilities for coffee products, the provision of agricultural materials, comprehensive training programs, threshing services, and access to weighing scales, among others.

In addition to its focus on members, the cooperative actively engages with the broader community.     Behind Finca Siquem lies the Roldan family. The farm was founded in 1921 and neglected for generations. In 2018, it underwent a revival under the leadership of the Roldan family, who acquired the farm from a family friend.

    Since its revival, Finca Siquem has been focused on specialty coffees. They sought the advice of agronomical engineers and received assistance from the National Coffee Association (ANACAFE). As a first step, the engineers recommended analyzing the soil and then creating a customized recipe for soil reconditioning.

    Finca Siquem in Guatemala is a significant player, spanning 355 acres in size. From the beginning, the Roldan family understood the climatic conditions of their region. As part of their revival project, they replanted coffee trees (removing a significant portion of them), built an artificial lagoon, a water treatment plant, and opted to preserve part of the farm with native trees.

    Siquem produces various coffees, with their Estate Blend standing out for its consistency and traceability from one harvest to another. This blend is exclusively made from high-altitude beans.

    This coffee is the result of 23 producers from the department of Salado Blanco in the municipality of Huila, Colombia. The 23 producers who worked collectively to create this coffee, named the lot Salado Blanco in honor of the district it is grown in. Salado Blanco produces excellent coffee but is not as well known as its neighboring districts in Huila and as the producers say, their town is part of their identity. Each producer operates a small family farm that ranges in size from 1-5 hectares. This coffee is created using a blend of Caturra and Colombia varietals with which the producers have been working with for the last few seasons, the main harvest is between the months of November and January and a secondary harvest from May to June.

    The Salado Blanco Recipe
    The harvest takes between 15 and 18 days and is done manually by the family and neighbors. The coffee is kept in cherry form and undergoes an initial fermentation of 18 to 24 hours. Afterwards, the coffee is depulped and undergoes a second fermentation of 36 to 48 hours. Once washed, it is sun-dried for 15 to 20 days to reach the optimal moisture content.

From tailored workshops on coffee analysis and preparation, exclusively for female members, to deconstructing gender norms ingrained in the agricultural landscape, their efforts transcend economic objectives. The transformation of female participation, overcoming historical reticence, reflects a commitment to showcasing the indispensable contributions of women on the farm. The work with women extends beyond traditional boundaries, creating spaces where they feel acknowledged and fostering a reality where their influence in agriculture is pivotal.
