The producer

Rómulo Huancas Chinchay is one of longest tenured partners at Yellow Rooster, having first worked with his coffee in 2019, and nearly every year since. We first noticed the quality on the cupping table, and then made it our mission to visit on a future trip to Peru. High above the coffee town of La Coipa, Rómulo's farm Finca La Mitad del Corazón (Named "The Middle of the Heart" because of the shape of the mountains and valley in which the farm is located) sits between 1900 and 2050 meters above sea level, the single highest farm we work with in Perú. The difficult climate conditions are what help create such a beautiful coffee, given that the coffees mature slowly, causing the density and flavor to achieve a level of complexity unlike some of his neighbors below. Additionally, after the day's harvest, he leaves the coffees in cherry in grainpro bags at the farm, where the cool air allows a slower fermentation to develop, sometimes for up to three days. After depulping and washing, the drying can take up to 25 days, which allows for a great stability and longevity in the cup.
